Watercress Soup

    Watercress soup

(Slow cooker / boil in pot)

Ingredients:
Watercress
10 red dates without seeds
1 tbsp of wolfberries (douqizi)
1 tbsp of Chinese “Bei” almond
1 tbsp of Chinese “Nan” almond
500g of pork ribs or lean pork
Salt (to taste)

Methods:
1. Wash and cut pork rib or lean pork to smaller size.
2. Throw all the ingredients except salt into slow cooker/pot.
3. Add hot water into slow cooker/pot.
4. Slow cooker turned to automatic and let it be till ready for dinner. (I do this while still in Singapore and working so I prepare in the morning and we eat in the evening.
Or
Pot, turn to middle flame and bring it to boil. Let it boil for 20 minutes and turned to small flame for another 15 minutes.
5. Add salt to taste and serve.

Pork Rib with Lotus Root Soup

    Pork rib with lotus root soup

(Can also used slow cooker, cook from morning)

Ingredients:
500-600g Pork
1 big Lotus root – 1 if is big one, 2 if is small
1 Carrot
8 Red dates
1 Dried octopus / dried squid
3 big soup bowls of water
a handful of chinese wolfberries

Methods:
1. Scald the pork rib – to get rid of the smell also the get rid of the blood etc so your soup will looks more appetizing and nice too.

2. Put some water in a pot put the pork rib inside and put it on the stove, cook till water boiling and then turn off the fire. Use tap water to wash and clean it.

3. Wash the lotus root, no need to cut. After the soup is ready then cut. Somehow the old people said like that taste better. Soak the red date, remove the seed. Wash the carrot, cut into small size.

4. Put water in a pot, boil the water. When cooking soup you must make sure the water is boiling before you put the meat/pork rib in.

5. Put all the ingredient in, cook for 2 to 3 hours. Start with big fire about 30min then turn to small one.

6. When it is ready, add salt to taste.

When using slow cooker, just used auto. But must used hot boiling water when making this soup.

Winter Melon with Pork Rib Soup

200g of winter melon
10 red dates without seeds
1 tbsp of wolfberries (douqizi)
1 tbsp of Chinese “Bei” almond
1 tbsp of Chinese “Nan” almond
500g of pork ribs
Salt (to taste)

1. Wash and cut pork rib to smaller size.

Potatoes, Carrots, Onion and Chicken Soup

(Can also used pork ribs, lean pork instead of chicken.)

Ingredients:
3 potatoes peeled and cut to quarter
2 carrots peeled and cut to smaller size
Half onion cut into quarter
500g of chicken breast (debone) or drumsticks [remove skin for chicken]
Salt (to taste)

Methods:
1. Wash and clean chicken breast (cut to smaller pieces) / drumsticks

2. Add all ingredients into pot and add hot water.

3. Use middle flame to bring to boil and let it boil for 20 minutes and then small flame for another 15 minutes or until potatoes and carrots are soft.

4. Add salt to taste and serve.

Celery can also be added to the soup.

Simple Miso Soup

    Simple Miso Soup

(there are also more complicated Miso Sake soup and other as well).

Ingredients:
1 Tofu
1 small packet of seaweed for miso soup
10 shitake mushroom cut into half
1 tbsp of miso paste

Methods:
1. Cut tofu into small cube while bring water to boil.
2. When water is boiling, add in miso paste and stir till dissolve.
3. Add in all the other ingredient and bring to boil.
4. Ready to serve.

Oxtail Soup

Oxtail Soup

Ingredients:
4-6 pieces of Oxtail
1 carrot, cut into wedges
1 tomato, cut into wedges
2 potatoes, cut into wedges
2 onions, cut into wedges
1 cube of beef stock (Make your own stock with beef bones)
Water
2-4 tbsp of peppercorn, depending on how spicy you like the soup
Salt

Method:
1. Wash and trim fat off the oxtail.

2. Boil a pot of water.

3. Add oxtail and bring to boil. Remove any scum you see.

4. Add peppercorns, carrots, onions and potatoes into the pot and keep boiling on medium fire.

5. Add a cube of beef stock. (Or boil beef stock with some beef bones)

6. Let the oxtail and vegetables boil for 1 hour then add in the tomatoes.

7. Keep the soup boiling for at least 2 hours or until the meat falls off the bones easily.

8. Add some salt for taste when ready to serve.

You can add more carrots and tomatoes if you prefer a sweeter
I prefer to boil my own stock.
