English Scones

As I was looking through my recipes, I noticed that I did not update more different scones here as I felt that if one is game enough to try making scones, you will try doing the different scones using the basic scone recipes and try with sultana, pumpkin, chocolate, etc. So I decided that I should not take away the joy from you to experimenting around, Like what my dear husband also says we are to teach our boys to fish and not to give them fish.

Have fun experimenting in the kitchen. I am looking forwards to my elder boy’s school holidays to whip up a whole lots of yummy pastries with him in the kitchen and allowed my 16 month-old to play around with dough and have fun.

Ingredients:
325g cake flour
1 tbsp baking powder
¼ tsp salt
65g sugar
100g unsalted butter
50g lard
1 whole egg
120g cold fresh milk
60g oatmeal
30g dessicated coconut
Fresh milk to taste

Method:
1. Preheat oven to 170 – 180°C.

2. Freeze unsalted butter and lard till hardened. Remove. Sifted cake flour, baking powder, salt and sugar together onto frozen unsalted butter and lard. Chop frozen unsalted butter and lard into small pieces using spatula. Mixed well.

3. Pour in the whole egg and cold fresh milk. Mix well to form dough. Toss in oatmeal and dessicated coconut then stir well.

4. Transfer dough into plastic bag. Shape and press to compact into dough about 2cm – 2.5cm thick. Refrigerate for 1 hour.

5. Remove. Press out pieces of dough with cutter. Arrange on baking tray. Brush with milk and bake.

6. Bake in preheated oven for about 20-25minutes.
